Portabella Mushroom and Grilled Raddichio Salad with Mixed Greens 

Caramelized walnuts, and seeds. Dressed with apple cider and black cumin vinaigrette. (vegan)

 

Greek Style Quinoa Salad.

Mixed greens, quinoa pilaf sautéed with mushrooms, roasted beets and yams, jicama, olives, feta cheese, cucumber, marinated red onion, hemp seeds and roasted sunflower seeds. Dressed with aged balsamic and extra virgin olive oil vinaigrette. (vegetarian)

Seasonal greens, and pickled red onions. Dressed with mint and ginger vinaigrette.

Moussaka Grilled Sandwich

Grilled eggplant and mushrooms and spicy tomato sauce and greens on toasted whole grain bread. Topped with white sauce made with potatoes, cashews, onions, garlic, and parsley; with cheese (optional)

Curried White Fish with Brown Rice Pilaf

Cooked with coconut milk and Indian spices.

 

*Seared wild Cod 

Sautéed with Tomato, Peppers, Fennel, Radish, and Red Onions saute. Topped with toasted pine nuts. and a side of sautéed mixed greens.

 

Morrocan Style Fish with whole grain garlic bread

In fresh tomato sauce, red pepper, oregano, and parsley.

 

*Baked Salmon Tacos

Marinated in sweet and spicy flavors. Served with fennel, kale, red cabbage, cucumber, and red onion slaw. Topped with fresh tomato, cilantro, and lime salsa and sour cream. Drizzled with grapeseed oil.

Kale Salad with apple, balsamic pears, caramelized walnuts, pomegranate, & pickled onions. Served with roasted sunflower seeds, goat cheese and feta cheese.

Mushroom Wraps with Avocado and Cranberry, Date, and Cherry Chutney
